I have an 870 Wingmaster in excellent condition w/a 28', Modified choked barrel that has a 2-3/4' chamber. I just recently purchased a Remington 1100 shotgun that has a serial number on. Remington has not made a NON-Magnum pump gun in 12 or 20 gauge in over 25 years now. The serial number should end in an M. The serial number should end in an M. A Wingmaster has gloss bluing and nice walnut, and that is most assuredly NOT gloss bluing. Look up a Remington serial number by using Remington Serial Number Lookup. Remigtons have a date code on the barrel. As long as it is the original barrel this is pretty accurate. For about 2 years, 1990-91 I think they temporarily stopped dating the barrels. If you find one with no date code you'll need to contact Remington. Or if not the original barrel which happens quite often on 870's and other shotguns. Not as common on rifles.

Click on the specific rifle for a SN range and the dates made for the Rugers.
Most Marlins made after 1972 have an easy date code built into the SN. Just subtract the 1st 2 digits of the SN from 100. For example if the 1st 2 numbers are 25, the gun was built in 1975. If it is 88, the gun was made in 2012. For older guns look here. This code does not work with all guns. Some limited runs used different systems, but it works for most.

Winchesters made after the 1960's have no on line data that I've ever located. You'll have to go to a bookstore and buy a reference book, or post a partial SN on line and ask someone who has one of the reference books to look it up for you.

AFAIK, The receiver cannot be dated by SN, but the bbl can, AND hopefully the bbl is original to the receiver.
The Remington Date Codes are always stamped into the barrel's lower side, near the rear - just ahead of the receiver.
The first letter of the Code is the month of manufacture, followed by one or two letters which are the year of manufacture.
As noted above, for shotguns with removeable barrels, the code will be valid for the manufacture of the barrel; maybe for the receiver, as barrels do get switched around.
According to the 'Blue Book of Gun Values', the coding continues as follows (edited to reflect the intro year of the OP's Model 870) :
